These Bacon Wrapped Chicken Breasts underwent some trial and error before perfecting it to my liking! The first time I made it, I felt it was a little too dry. I cooked it for longer than I should have because it took forever for the bacon to get that glisten-y, crispy look I wanted. The second time around, I cooked it for about 10 minutes less to ensure juicy chicken but I added a few minutes of broiling to really give the bacon a final crisp. As you can tell from the picture, it really worked out!

I kept this recipe rather simple and it made for a delicious protein addition to any meal. I paired it with my Eggplant Lasagna Roll Ups this time around. Juicy chicken stuffed with asparagus and wrapped in bacon makes this dish a delicious, protein filled meal!

Ingredients

  • 6 chicken breasts

  • 16 oz package of bacon

  • ½ lb asparagus (about 30 spears)

  • 1 Tbs olive oil

  • 1 tsp garlic salt

  • 1 tsp black pepper

Directions

  • Preheat oven to 400 degrees 
  • Cut asparagus in half and discard the bottom half. Place asparagus on a plate and roll around in the olive oil, garlic salt and black pepper until well coated 
  • Make a slice in each chicken breast creating a pouch that the asparagus will be stuffed in. Make sure to slice into the thickest part of the chicken breast. (It helps if you hold the chicken breast firm and flat with the palm of your hand while slicing) 
  • Sprinkle some more salt and pepper on the chicken breasts as well, if desired 
  • Stuff the asparagus spears into the chicken (about 4-5 spears each depending on the size of the breasts) 
  • You can use a toothpick to hold the chicken closed once the asparagus is in there (Optional: top with a slice of onion for extra aroma and flavor!) 
  • Next, wrap each chicken breast with 2-3 slices of bacon 
  • Place the wrapped chicken side by side on a large baking pan 
  • Bake for 40 minutes. Then move the pan to the highest rack in the oven and broil for 3 minutes to crisp the bacon 
  • Remove from oven and let rest at least 5 minutes before serving
