A few weeks ago, Aldi was selling their carton of eggs for $0.39!!! They were sold out for three days before I was finally able to get my hands on some. So naturally, once they were all stocked up again, I made sure to buy as many cartons as I could! Afterwards, I was left with the dilemma of what the heck to do with all those eggs. Other than the obvious Deviled Eggs, my next idea was egg salad.
I always thought plain old egg salad was kind of boring. I wanted something with a little more pizzazz (yes I know, I really love using that word). I thought adding a vegetable and a meat would do the trick! In my experience, broccoli always does really well in salads. And for the meat, of course I chose my trusted kielbasa. Easy ingredients, quick prep time! Please let me know if you’d try this salad out!
