Chocolate Covered Caramel Coconut

These Chocolate Covered Caramel Coconut will make you do a double take! I know that’s what I did when I first popped them out of their square molds to admire them. Not only do they look very attractive, they are a sweet treat filled with chocolatey, caramelly, coconutty goodness. And that all you need to make them too: Chocolate, caramel and coconut. The short ingredient lists are always my favorite.

I used a Silicone Squares Baking Mold to make these desserts because it’s what I had on hand at the moment. But the beauty is you can use any shape mold you like! Silicone ones are best because you can easily pop them out without breaking the treat. But I encourage you to get creative with your shapes! Chocolate Covered Caramel Coconut. Only 3 ingredients needed! Coconut Flakes, Caramel Sauce and Chocolate Chips.

Ingredients

  • 1 cup coconut flakes

  • 1/3 cup caramel sauce

  • 3 cups chocolate chips

Directions

  • In a small bowl, mix together the coconut flakes and caramel sauce until well combined
  • Put about 1 ½ cups of the chocolate chips in a microwavable bowl and melt in the microwave in 30 second intervals. Stir between each 30 second interval until chocolate is completely melted and smooth
  • Use a Silicone Squares Baking Mold to make the treats
  • Cover the bottom of each square with melted chocolate
  • Using your hands, place about ½ a tablespoon of the caramel coconut mixture into each square on top of the melted chocolate
  • Melt the rest of the chocolate chips using the same technique in Step 2
  • Cover the caramel coconut in the square molds with the rest of the melted chocolate (you can leave some uncovered and place a chocolate chip on top instead for a different look)
  • Refrigerate for at least 30 minutes until chocolate hardens
  • Pop the treats out of the mold and enjoy!
