Ricotta is my new discovery for the year and I’m sure glad we’ve been acquainted! The first recipe I utilized it in was my Stuffed Eggplant Roll Ups (which were a big hit and recurring meal since then). I had a lot of leftover ricotta after that so I decided to try out different recipes. One of which is this refreshing and zesty dip.
