Although I personally have not switched over to the vegan way of life, I would like to say that the vegan diet is something I truly applaud. It takes a great deal of self-control to refrain from all animal products. Being a part of the Coptic Orthodox church, this is something that we practice yearly for Lent. 55 days of a strict vegan diet. And let me tell you, it is hard to say the least. In order to alleviate the cravings for meat and cheese, we like to get a little creative with our food.
Black beans are one of my go-to ingredients when I want a quick meal, so my pantry is always full of cans and cans of them. But on this particular day, I was really craving a burger. Naturally, I googled “Vegan Burgers” and found the brilliant idea for black bean patties. You vegans really are imaginative. I raided my fridge and pantry and put together my own version of a black bean patty from the ingredients I had on hand. It was so savory and full of flavor that my burger craving was satisfied tenfold. Please give it a try! You won’t be disappointed.
