I’ve had quite the obsession with turkey kielbasa lately. It’s just so flavorful and goes great in so many different meals. Lately I’ve been adding it to my omelets in the morning or making crockpot meals with it such as this BBQ Kielbasa and Shrimp. My husband and I will usually have kielbasa and cheese on whole wheat crackers whenever we’re craving a quick snack. The possibilities are endless. So naturally, adding it to these Mini Kielbasa & Egg Quiches was a must. 

Although this recipe is made using a mini muffin tray, you can double the ingredients and make full sized egg muffins as well. I feel like the mini quiches go great as a side at brunch if you’re feeling fancy. Or if you’re just looking for a quick and light breakfast to go. One thing I’d like to mention so that no one else makes the same mistake I made: Do NOT use baking cups when making these quiches. Unfortunately, the quiches will stick and bake into the cups and tear apart when you try to remove them. I learned the hard way (that’s why I’m known for my eyes closed cooking…..). I would suggest just greasing the pan with oil or using a nonstick spray.

These Mini Kielbasa & Egg Quiches are great for a quick breakfast or brunch! Delicious, easy and low in calories!

Ingredients

  • 3 eggs

  • ½ cup chopped turkey kielbasa

  • ¼ cup chopped onions

  • ¼ shredded mozzarella cheese

  • ½ tsp salt

  • ½ tsp pepper

Directions

  • Preheat oven to 350 degrees
  • Grease a mini cupcake pan with oil or nonstick spray
  • Cover the bottom of each cup with the chopped kielbasa (about ½ a tablespoon in each cup)
  • Sprinkle the chopped onions over the kielbasa layer
  • Mix the eggs, salt and pepper in a small bowl until smooth
  • Pour about 1 Tbs of egg mixture into each cup
  • Cover the top with the shredded mozzarella
  • Place in oven and bake for 20 minutes
  • Let cool and then use a butter knife to remove each quiche from the cupcake slot. Serve and enjoy!
