This meal is a daily must have on my list. My husband and I have omelets several times a week. And to be perfectly honest, I’ll have them at any time of the day, not just breakfast. They are quick, easy and, if made accordingly, extremely healthy! This meal covers four of the major food groups all before noon. Grains, vegetables, meat, and protein. If you’re looking to watch your carb intake, I would suggest swapping the bagel for a whole wheat tortilla or whole wheat English muffin instead. All three make for an equally delicious finished product.
The great thing about this recipe is that it can be easily customized. Once in a while I’ll add some extra ingredients such as spinach or mushrooms. The possibilities are really endless! But to keep things simple, the recipe includes my usual go-to ingredients which are jalapenos, onions and turkey kielbasa. Feel free to get creative as you please!
