Stuffed Eggplant Roll Ups

This is another one of the low-carb recipes I’ve been trying out. I am beyond happy that cheese fits into my low-carb diet because I can’t live without it and it makes everything better. This particular recipe uses three types of cheeses including ricotta, mozzarella and parmesan. These Stuffed Eggplant Roll Ups will curb your lasagna cravings without all the carbs!

Ingredients

  • 1 large eggplant

  • 1 Tbs olive oil

  • 1 egg

  • ½ cup ricotta cheese

  • ½ cup shredded mozzarella (plus extra for sprinkling on top)

  • ¼ cup shredded parmesan

  • 1 tsp garlic salt

  • ½ tsp black pepper

  • ½ tsp Italian seasoning

  • ½ tsp oregano

  • 1 ½ cup (or more) marinara

Directions

  • Preheat oven to 350 degrees 
  • Slice the eggplant lengthwise creating about 8-10 slices about ¼ inch thick 
  • Place the eggplant slices side by side on a large baking pan. Drizzle them with the olive oil and sprinkle with salt and pepper 
  • Bake for 15 minutes. While they’re baking, prepare the cheese stuffing. Mix the Ricotta cheese, mozzarella, parmesan, egg and spices in a small bowl until well combined 
  • Once eggplant slices are done baking, take the slices off the pan and pour about half the marinara unto the bottom of the pan, spreading evenly.  
  • Place a large spoonful of the cheese mixture onto the center of each eggplant slice and roll them up tightly. Then put all the rolled up, stuffed eggplants back into the baking pan side by side  
  • Cover the eggplants with the rest of the marinara sauce and sprinkle with extra mozzarella cheese 
  • Return to oven but this time, set to 400 degrees and bake for 20 minutes
