I bought a big ol’ bottle of lemon juice the other day when I made some Buttery Lemon Caper Sauce. So I have a lot of lemon juice to burn through which mean, lots of yummy lemony recipes to come! I’ll definitely be making some of my mom-in-laws amazing Lemon Squares soon. But before dessert comes dinner! It doesn’t get any easier than this mouthwatering Roasted Salmon & Broccoli recipe.

As you can see from the picture above, this is a one pan meal that’s ready in 15 minutes! Salmon filets go in the middle of the pan with the broccoli florets surrounding them. Everything is drenched in the best lemon garlic sauce and the filets are topped with ½ tablespoon of butter EACH for that extra buttery consistency. I can’t even describe how good the final flavor is. Let’s just say, I was stuffing my face before I could even empty the pan for dinner. It takes just 15-minutes to make this mouthwatering Roasted Salmon & Broccoli! Drenched in an amazing lemon garlic butter marinade.

Ingredients

  • 2 lbs Pink Salmon Filets

  • 3 heads broccoli, cut into florets

  • 1 Tbs lemon juice

  • 1 Tbs olive oil

  • ¼ tsp garlic salt

  • ½ tsp onion powder

  • ¼ tsp black pepper

  • ¼ tsp paprika

  • Sprinkle of thyme leaves

  • 4 cloves garlic, minced

  • 4 Tbs butter, divided

Directions

  • Preheat oven to 400 degrees 
  • Cover a large baking pan with parchment paper 
  • In a small bowl, prepare the marinade by whisking together the olive oil, lemon juice, garlic salt, black pepper, onion powder, thyme, paprika and minced garlic.  
  • Put the broccoli florets on the pan and pour HALF the marinade on the broccoli. Stir until broccoli is well coated 
  • Push the broccoli off to the sides of the pan leaving plenty of empty space in the middle 
  • Place the salmon filets side by side in the middle of pan with the broccoli surrounding them 
  • Pour the rest of the marinade over all the salmon, spreading evenly with a brush or back of spoon 
  • Top each salmon filet with ½ Tbs of butter 
  • Place in oven and bake for 15 minutes. Broil for an additional 1-2 minutes to brown the top of salmon 
  • Serve over white rice and enjoy! ​
